Asian Salad with Nashi & Chinese Char Siu Pork
Serves 4 as an entrée
   1 piece Chinese Char Siu Pork, approximately 500g*
   2 nashi
   1 lemon, juiced
   1 Lebanese cucumber, julienned
   1 red pepper, julienned
   1 bunch watercress, leaves picked

Dressing:
   2 tbsp soy sauce
   2 tbsp Shao Hsing Chinese rice wine
   1 tsp minced ginger
   2 tsp sesame oil
   2 tbsp fried shallots

   Finely slice the pork.
   Peel and finely slice the nashi.
   Toss the cucumber, red pepper and watercress in a large bowl. Add the pork and nashi slices.
   Dressing: Mix together the soy, Chinese wine, ginger and sesame oil. Drizzle over the salad, sprinkle with fried shallots and serve.

 *Chinese char siu pork is available from Chinese takeaway shops.
